Wine Poached FruitCategories: Curtis aike, Flash3 Yield: 1 servings 2 c Rose wine 2 tb Raspberry liqueur 2/3 c Sugar 1 Vanilla bean 3 Ripe firm peaches 3 Plums ----------------------------------TOPPING---------------------------------- 1/2 c Heavy cream 1/2 ts Sugar 1/2 ts Brown sugar 1/2 ts Vanilla extract Mix together wine, liqueur, sugar & vanilla bean in large pot. Bring to a boil. Reduce heat to simmer. Add peaches & plums. Poach until tender, about 5 minutes. Remove pan from heat Pan from heat & let cool a bit. Drain fruit. Whip heavy cream with sugars & vanilla until soft peaks form. To serve: place fruit in serving bowls topped with whipping cream. Approximately 6-8 minutes.
