Wild Rice And Spam

1 cn Spam luncheon meat - (12
-oz); chopped
2 c Cooked wild rice
1/2 c Chopped carrots
1/2 c Chopped pecans
1 md Yellow pepper; chopped
1/2 c Raisins
Lettuce cups; (optional)

1/3 c Oil
2 tb Sherry
1 Garlic clove; peeled
1 tb Chopped parsely
1/3 c Snipped chives
1/4 ts Freshly-ground black pepper

Combine the Spam, cooked rice, carrots, pecans, yellow pepper, and raisins.
Cover and refrigerate the mixture for four hours or overnight. Serve in
lettuce cups if desired.

For the vinaigrette: Combine all ingredients in a food processor and blend
until very well minced.
