Vegetable-Rice TossCategories: Picnics, Salads, Appetizers Yield: 6 Servings 4 c Cooked long-grain rice, -chilled 1 sm Cucumber, diced 1 Carrot, diced 1/2 c Frozen sweet green peas, -thawed 1 bn Green onions,chopped 1/2 Red bell pepper, diced 1/3 c Vegetable oil 1/4 c Fresh lime juice 1/4 c Red wine vinegar 2 tb Chopped fresh basil 1 tb Sugar 1 tb Dijon mustard 1 Garlic clove, pressed Combine first 6 ingredients. Whisk together oil and next 6 ingredients until blended. Pour over rice mixture; toss gently.
