Sweet Potato Mini-LatkesCategories: Appetizers, Christmas Yield: 30 Servings 2 md Sweet potatoes ( l pound, -peeled and shredded 2 md Green onions, finely chopped -(2 tablespoons) 1/4 c All-purpose flour 1/2 ts Salt 1/4 ts Pepper 1 Egg, slightly beaten 1 c Sour cream Sliced pecans, if desired Heat oven to 400F. Grease cookie sheet. Mix all ingredients except sour cream and pecans. Drop sweet potato mixture by teaspoonfuls onto cookie sheet; flatten slightly. Bake 12 to 15 minutes, turning once, until golden brown. Top with sour cream. Garnish with pecans. About 30 appetizers. * Shredded white potatoes, blotted dry with paper towels, can be substituted for the sweet potatoes.
