Spam JambalayaCategories: Main dish, Stews Yield: 6 Servings 1 cn SPAM Luncheon Meat, cubed -(12 oz) 1 c Chopped onion 2/3 c Chopped green bell pepper 1/2 c Chopped celery 2 Garlic cloves, minced 1 cn Tomatoes, cut up (14 1/2 oz) 1 cn Lower sodium chicken broth -(10 3/4 oz) 1/2 ts Dried leaf thyme 8 dr Hot pepper sauce 1 Bay leaf 1 c Long grain rice 2 tb Chopped parsley In large non-stick skillet or 3-quart non-stick saucepan, saute SPAM, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaf. Bring to a boil; stir in rice. Cover. Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaf.
