Rice-Raisin PuddingCategories: Rice, Desserts, Fruits Yield: 6 servings 1 1/2 c Cooked rice 1 c Chopped apples 3/4 c Skim milk 1/2 c Raisins 1/2 c Brown sugar 2 Eggs; beaten 1 ts Vanilla In a large bowl, mix all ingredients. Transfer to a 1 1/2 quart casserole. Bake at 325 degrees F for 1 hour or until firm and golden brown. Serves 6. Per serving: 219 cal, 2g fat, 45mg sodium.
