Pork Lo MeinCategories: Pork, Main dish Yield: 8 Servings 16 oz Spaghetti 3/4 c Chicken broth 1/2 c Soy sauce 2 ts Sugar 2 tb Peanut oil 2 Pork tenderloins (about 2 Pounds total) thinly sliced 8 Green onions, thinly sliced 1/2 lb Mushrooms, sliced 1/2 lb Snow peas, trimmed Prepare spaghettiu according to package directions; drain and keep warm in a large serving bowl. Meanwhile, in a small bowl, combine chicken broth, soy sauce and sugar, mix well. In a large skillet, heat oil over high heat. Add pork and cook until no longer pink, stirring constantly. Add green onions, mushrooms, snow peas and the chicken broth mixture. Stir-fry 3 to 5 minutes, or until the vegetables are tender-crisp. Toss with spaghetti and serve.
