Light Hot Fudge SundaesCategories: Diabetic, Frozen dess Yield: 8 servings 1/2 c Sugar 1/4 c Cocoa 1 tb Cornstarch 2 ts Instant coffee granules 1/2 c Evaporated skim milk; plus 2 tb Evaporated skim milk 2 ts Margarine 1/2 ts Vanilla 4 c Fat-free vanilla frozen -yogurt Combine sugar, cocoa, cornstarch and instant coffee in a medium saucepan. Gradually stir in the milk. Bring the mixture to a boil over medium heat stirring constantly, until it thickens. Remove from heat and stir in margarine and vanilla; keep stirring until margarine is melted. To serve, scoop 1/2 cup frozen yogurt into individual serving bowls, and top evenly with hot fudge sauce.
