Kentucky JackCategories: Brunch, Breakfast, Ham, Sandwich, Sthrn/livng Yield: 4 Servings 2 (1/4-inch thick) slices -uncooked country ham 2 tb ;water 4 sl Tomato 2 English muffins; halved and -toasted 4 sl (1-ounce) Cheddar cheese 4 sl (1-ounce) Swiss cheese Place ham in a large skillet over medium heat. Add water, and fry 4 to 5 minutes on each side. Remove ham slices from skillet; add tomatoes to skillet, and grill lightly. Place equal amounts of ham over each muffin half. Top each with a slice of tomato, Cheddar cheese, and Swiss cheese. Place on a baking sheet, and broil 1 to 2 minutes or until cheese melts. Yield: 4 servings. "Southern Living" October, 1986.
