Winter Fruit Crisp with Cinnamon Cream
to 55 minutes or until topping is crisp and fruit is tender when tested with sharp knife. Serve warm or at room temperature with Cinnamon Cream Topping. Serves 12 Cinnamon Cream Topping: In mixing bowl, beat together cheese, sugar and cinnamon until cheese is softened. Gradually fold in whipped cream, and brandy (if using), mixing until well blended. Wild Mushroom And Pecorino Tart - Modern British
Oil a baking sheet. Place two sheets of pastry on it. Place the mushrooms in a layer in the middle of each sheet. Transfer to the oven and cook for 20-25 minutes, or until golden brown. Remove from the oven and top with Pecorino and return to the oven for 3-4 minutes. Remove and serve immediately. ----- ----------

fruits, spirits, nuts and ale and stir all together well. Make a wish! Leave overnight to develop the flavour and darken the colour. The next day, preheat the oven to 130C. Fill the prepared pudding tins and cover with foil. Bake in a bain marie for approximately 2 hours until firm. Allow to cool for half an hour or so and then remove from tins with a firm shake. I like to serve this with brandy cream and a swirl of sharp raspberry puree to cut through the richness. ----- ----------

Stuffed Veal Chops with Ham And Mozzarella - Italy

If the outside of the chops seem to be turning too brown, cover with silver foil for the remainder of the cooking time. Fill a separate pan with water, add the washed spinach and cook al dente. Stuffed Capon with Ceps in a Salt Crust - France
pepper. On a lightly floured surface, roll out the salt dough to an oblong about 8mm thick. It should be large enough to wrap comfortably around the capon. Make a bed with the sage on one side of the salt dough and set the capon on top. Brush the dough around the chicken with the egg wash. Place more sage over the capon, then roll it over to wrap it in the dough. Seal the joints completely with the egg wash, pressing with your fingers. Place seam-down on a baking sheet and bake for 1 hour 45 minutes. Remove from oven and leave to rest for half an hour. Take the capon to the table in its crust. Cut around the crust and lift the top, then lift out the capon. Discard the sage and carve the capon. Share the stuffing and spoon the sauce. ----- ----------

Spicy Festive Strudel with Apricot And Stilton - Vegetarian

Roasted Fillet of Wild Boar with a Mustard Crust - British
for a further 20 minutes to settle the juices and tenderise the meat. The boar should be very juicy and just slightly pink. Serve on a bed of 2 cabbages, spiced red cabbage and juniper cabbage, with all its accompaniments. Sprouts in lemon oil with crispy thin bacon and roasted parsnips go well with this. The mirepoix and boar juices can be used to make the gravy. I like bread sauce with bay leaf with this, and a crab apple and thyme jelly is also nice. ----- ----------

Roast Grouse with Cotechino Stuffing - Mediterranean
Stuff the birds, and wrap each in two slices of prosciutto. Preheat the oven to its hottest setting. Heat the olive oil in a pan and cook the garlic, onion, thyme and chopped mushrooms until the onion is softening. Add the mushroom juice and cook until no liquid remains. In a roasting pan, heat some olive oil and brown the birds on each side. Roast in the hot oven for 10 minutes, turn the birds and roast for a further 5 minutes with the mushroom mix and the wine. Remove the birds and keep warm. Stir the juices in the pan and add a little butter to enrich the sauce. Serve the birds with polenta and pangrattato. ----- ----------

Then increase the oven temperature to 220C/450F/gas mark 8 for another 15 minutes, having removed the foil to brown the top of the joint. To allow easy carving, rest the crown for 10 minutes under foil. Any juice that runs out of the meat while it is 'resting' should be absorbed by the stuffing mix. Serve with an American-style accompaniment of fettuccine with wild mushrooms and a green vegetable such as creamed spinach with bacon and onion. ----- ----------

Raspberry Fudgies
For topping, spread jelly evenly over warm crust; cool completely. In a medium saucepan, combine sugar, milk, and butter. Stirring occasionally, bring to a boil over medium heat. Stirring constantly, boil 5 minutes. Remove from heat. Add chocolate chips, marshmallow creme, and vanilla; stir until smooth. Stir in pecans. Immediately pour topping over jelly. Cool completely in pan. Cut into 1 inch squares. Store in an airtight container. Yield: about 8 dozen fudgies. First make the sauce. Boil the vinegar and sugar together to a syrup then remove from the heat and add the garlic, chillies and salt. Allow to cool and add the coriander. Panettone Milanese
Slash an "X" in the top of each panettone with buttered scissors and bake at 375 degrees for about 50 minutes. Unmold immediately and paint all over with the melted butter. Cool on a rack. Double-wrap each panettone in plastic and store in the refrigerator. Bring to room temperature before serving. NOTE: To ensure maximum lightness, allow the dough to ferment, then proof slowly and for as long as necessary. Rushing the process will produce a leaden texture.
