Gingerbread Frames
heavy-duty, zip-top plastic bag; snip off end or small corner of zip-top bag. On the back of each cutout frame, pipe frosting on three sides. (Leave 1 side open for inserting photograph.) Push 3 peppermint sticks into frosting. Pipe frosting on top of peppermint sticks, and attach solid frame back. Let dry. DECORATE frames with frosting and assorted candies, as desired. Let dry. TO MAKE STAND: Carefully attach 2 candy canes to back of each frame with frosting (the hook of the cane will be the bottom of the stand that supports the frame). Let dry before standing. YIELDS: 8 frames. DECORATOR FROSTING: Combine all ingredients in a mixing bowl; beat at high speed with an electric mixer 10 minutes or until stiff peaks form. cover with a damp cloth to prevent drying. from 25 to 30 minutes. Remove from oven and let stand about 2 minutes. Meanwhile, place a baking sheet or piece of waxed paper on counter where buns will be cooled. Place cooling rack directly on top of buns, legs-side up. Invert pan onto baking sheet or waxed paper. Remove pan carefully, remembering that caramel can burn. Replace any walnuts or cranberries. Cool. Buns will keep well, uncovered, at room temperature for up to 1 day. Or cover and freeze. MAKE AHEAD: Prepare topping first and pour into pan. Sprinkle with nuts and cranberries. Set aside to cool. Then prepare dough and let it rise. Fill, roll and cut dough into 6 pieces. Place dough in a room-temperature caramel-lined baking pan. Loosely but completely cover with plastic wrap. Refrigerate at least 4 hours or up to 1 day. When ready to bake, preheat oven to 350F. Bake cold buns for a total of 35 to 40 minutes. If browning too quickly, place a piece of foil loosely over top. Preparation time: 45 minutes Rising time: 1 1/2 hours Cooking time 2 minutes Baking time: 25 minutes Makes 6 large buns. Gravy: Place pan with drippings on top of stove over high heat. Skim fat from pan and bring to simmer. Add 3 cups chicken stock. Remove 1/2 cup of liquid and combine with 1 teaspoon of arrowroot. Add to stock to thicken. You may need to repeat this process 2 to 3 times to reach desired consistency. Finish gravy, by removing from heat and adding sherry and chives. Serve with turkey. -----

Clootie Dumpling with Caledonian Cream - Scotland
round heated plate. First dip the dumpling into cold water for about 10 seconds. This prevents the skin sticking to the cloth. Now put into the bowl and untie the string. Open out the cloth and hang over the sides of the bowl. Put the serving plate over the bowl, invert it, and carefully remove the cloth. Drying out and serving: Dry out the dumpling in the oven. Sprinkle with caster sugar. Slice and serve with a dollop of Caledonian cream. Caledonian cream: Beat back the mascarpone and lightly whip the double cream. Fold the mascarpone through the cream, along with the other ingredients, and serve with the dumpling. -----
