Roast Grouse with Cotechino Stuffing - Mediterranean
Stuff the birds, and wrap each in two slices of prosciutto. Preheat the oven to its hottest setting. Heat the olive oil in a pan and cook the garlic, onion, thyme and chopped mushrooms until the onion is softening. Add the mushroom juice and cook until no liquid remains. In a roasting pan, heat some olive oil and brown the birds on each side. Roast in the hot oven for 10 minutes, turn the birds and roast for a further 5 minutes with the mushroom mix and the wine. Remove the birds and keep warm. Stir the juices in the pan and add a little butter to enrich the sauce. Serve the birds with polenta and pangrattato. ----- ----------

Roast Crown of Turkey - America
skin with butter, season with sea salt and freshly ground black pepper, cover with foil and roast for about 1 1/4 hours. Reduce this time slightly for fan assisted ovens. Then increase the oven temperature to 220C/450F/gas mark 8 for another 15 minutes, having removed the foil to brown the top of the joint. To allow easy carving, rest the crown for 10 minutes under foil. Any juice that runs out of the meat while it is 'resting' should be absorbed by the stuffing mix. Serve with an American-style accompaniment of fettuccine with wild mushrooms and a green vegetable such as creamed spinach with bacon and onion. ----- ----------

Preparing for Thanksgiving Doesn't Have To Be a "Thankless"
Season the skin and cavity well with salt and freshly ground black pepper. I often place a quartered onion and herbs such as rosemary and thyme inside the cavity for flavor. Place the turkey, breast side up, on a rack in a large roasting pan. Cook until the leg bone moves easily when wiggled and the temperature registers 180 degrees on an instant-read thermometer inserted at the thickest part of the thigh. I like to baste occasionally with butter, olive oil or stock to keep the turkey moist. If the breast starts to look too dark, place an aluminum foil tent over the skin to prevent burning. Let the turkey rest for 20 minutes after it's left the oven before you carve it. The juices will redistribute and the turkey will be much the better for it. Note: a clean oven prevents a smoky kitchen! But most of all, keep in mind that the main focus should not be the food, the time chart or fear of turkeys. It's about having fun, enjoying the company of your family and friends and giving thanks. © 1997 Lifetime Entertainment Services. All rights reserved. Panettone Milanese
Slash an "X" in the top of each panettone with buttered scissors and bake at 375 degrees for about 50 minutes. Unmold immediately and paint all over with the melted butter. Cool on a rack. Double-wrap each panettone in plastic and store in the refrigerator. Bring to room temperature before serving. NOTE: To ensure maximum lightness, allow the dough to ferment, then proof slowly and for as long as necessary. Rushing the process will produce a leaden texture. Marinated Spicy Turkey - India
3 and cook for a further 45 minutes. Remove the foil and carefully turn the bird over on its back. Pour the wine evenly all over, taking particular care to moisten the breast meat and legs. Cook for 10 minutes, then baste generously with the melted butter. Cook for a further 30 minutes basting every 10 minutes with the pan juices. Remove from the heat and allow to rest for 10-15 minutes. Transfer the turkey to a serving plate and strain off all the cooking juices from the tin into a measuring jug. You should have approximately 15floz of cooking juice, but if not, make it up to this amount by adding cold water. Make a paste of the chick pea flour with a little water and blend it into the turkey stock. Cook over a medium heat, beating it with a wire beater to prevent lumps forming. Add the wine and chives, cook for a further minute or so. Season to taste and remove from the heat. ----- ----------
