Crockpot Beef Casserole with Savoury PinwheelsCategories: Jude2 Yield: 1 servings -----------------------BEEF CASSEROLE---------------------------- 500 g Beef topside; blade, chuck -or ; gravy beef 2 Onions 2 Cloves garlic 1 c Beef stock 1/4 c Tomato paste 2 tb Wine vinegar 1 ts Cumin 1 ts Grated orange rind ---------------------SAVOURY PINWHEELS-------------------------- 1 1/2 c Flour 3 ts Baking powder 1/2 ts Salt 75 g Butter 1/4 c Water; About 1/4 c Orange marmalade 1 ts Wholeseed mustard 1 ts Wine vinegar Beef Casserole: Trim fat from meat and cut flesh into cubes. Peel and chop onions. Crush, peel and chop garlic. Place meat, onion, garlic, stock, tomato paste, vinegar, cumin and orange rind in the crockpot. Cover and cook on low for 8 to 10 hours. Thirty minutes before you are ready to serve, place pinwheels on top. Cover. Turn heat to high. Cook for 30 minutes or until pinwheels are cooked. Savoury Pinwheels: Sift flour, baking powder and salt into a bowl. Rub in butter until mixture resembles coarse crumbs. Add enough water to form a soft dough. Roll out on a lightly floured board to 5 mm thickness. Mix marmalade, mustard and vinegar together. Spread over dough. Roll up as for a sponge roll and cut into 2 cm slices. NOTES : Use whatever tougher meat cut suits your budget or what's on special. The pinwheels do away with the need for potatoes, rice or pasta. ----- |
