Asian Style Cucumber SaladCategories: 2bl Yield: 1 servings 4 lg Lebanese cucumbers; cut in -slices 3 Shallots; white part only, -(3 To 4) ; sliced thinly 1 tb White vinegar 2 tb Sweet chilli sauce Fish sauce to taste A good handful of coriander -leaves 50 g Crushed roasted peanuts Put the sliced cucumbers into a bowl with the shallots and sprinkle over the vinegar. Add the sweet chilli sauce and fish sauce and toss the salad. Just before serving add the coriander leaves and peanuts and toss again. Serve at once.
